Abstract (Croatian)

Provedeno istraživanje unutar ovog rada ima za cilj razvoj postupka za uspostavljanje ispitne metodologije za termostatirane komore za termičku obradu polutrajnih mesnih proizvoda unutar tvrtke "Gavrilović" d.o.o. - Petrinja. Spomenuta ispitna metodologija detaljno procjenjuje kvalitetu radnog volumena u promatranoj ispitnoj komori. Glavne utjecajne veličine unutar komore koja se ispituje su : temperatura procesa termičke obrade, temperatura u geometrijskom centru proizvoda nakon hlañenja postupkom tuširanja, masa pojedinačnog proizvoda unutar pojedinačne šarže, trajanje procesa termičke obrade, stalnost temperature termičke obrade i procesa hlañenja proizvoda, prostorno-temperaturni gradijenti, dinamika zagrijanja i hlañenja radnog volumena komore izmeñu 2 temperaturne radne točke, mjerna nesigurnost i odstupanje stvarne vrijednosti od zadane vrijednosti temperature radne točke unutar procesa termičke obrade. Kao posljedica mnogih uobičajenih tehničkih problema u praksi, u ovom radu je obrañena i analiza utjecajnih parametara metodom odzivnih površina (RSM=Response Surface Method), koja predstavlja izuzetno učinkovit i široko primjenjiv alat za rješavanje istih. Pomoću ove metode inžinjeri mogu analizirati i pronaći nepoznate odgovore (izlazeoutpute) na temelju unaprijed poznatih ulaznih podataka (ulaza-inputa), a sama metoda ima mogućnost predviñanja vjerojatnih ishoda i rangiranja različitih utjecaja pojedinačnih parametara. Sprovedena ispitna metodologija opisana je i u skladu s uputom meñunarodne norme IEC 60068-3-5. Meñunarodna norma IEC 60068-3-5 govori o postupcima ispitivanja stanja uspostavljenog okoliša, te o klasifikaciji i metodama ispitivanja istog unutar termostatirane ispitne komore. Ovdje su definirani i svi važni pojmovi vezani uz termostatiranu ispitnu komoru, kao i vanjski utjecaji na uvjete uspostavljenog okoliša unutar komore, način mjerenja temperature, način ugradnje temperaturnih osjetila, udio temperaturne promjene, standardni ispitni postupak i krajnji izvještaj o svojstvima ispitne termostatirane komore. Zbog prethodno uvjetovanih i definiranih postupaka, parametara i zahtjevanih ispitivanja, upotrebljavaju se ispitne komore koje mogu osigurati zadovoljavajuće kontrolirane uvjete uspostavljenog okoliša unutar svojeg radnog volumena.

Abstract

The aim of this thesis is to develop the procedure for the test methodology of thermostatic chambers for thermal processing of meat products in Gavrilovic Company. The test methodology detaily has to estimate the quality of working space of the test chamber. In the test chamber there are these main influential parameters : temperature of thermal processing, temperature in geometrical centre of meat product after process cooling shower, mass of individual meat product in the batch, time-duration of thermal processing, temperature uniformity of thermal processing and cooling process of meat product, spatialtemperature gradients, dynamics of warming and cooling of working space in chamber between 2 temperature set points, measurement uncertainty and deviation of actual temperature value from set temperature value of operating point in thermal processing. As a result of many usual technical problems, the influent parameter analysis is presented in the response surface method (RSM = Response Surface Method) in this work. This method is efficiet and applicable technology tools for solving a lot of different technical problems. By this method engineers can analyse and find out a lot of unknown answers (parameter-outputs) which are based on pre-known input data (parameter-inputs). This method can predict a few likely solutions and classify different influences of each singular parameter. Conducted test methodology is described in accordance with the instruction of IEC 60068-3-5. The international norm IEC 60068-3-5 describes the classification, test methods and procedure of testing of atmosphere conditions into working space of thermostatic test chamber. In this norm are defined all the important terms related to the thermostatic test chamber like: external influences which affect to the atmosphere conditions in the chamber, the way of the temperature measuring and the way of the temperature sensors installing, the range of temperature change, the standard test method and the final report of the atmosphere conditions into the thermostatic test chamber. Because of these requested procedures, parameters and defined possible tests, in many situations we can use the thermostatic chambers which ensure the well- controlled atmosphere conditions into its working space.
