Abstract (Croatian)
Rashladni sustav za skladištenje duboko smrznutog mesa važan je element u mesnoj industriji jer omogučava čuvanje hrane duži vremenski period, a da meso ne izgubi na kvaliteti. Meso se čuva na temperaturi od -18°C pomoću rashladnog uređaja koji koristi amonijak kao radnu tvar, te dvostupanjsku kompresiju i dvostupanjsko prigušenje. Hladionica (skladište) je smještena u sklopu složenog rashladnog postrojenja i izrađena je od predfabriciranog poliuretanskih panela. Napravljen je proračun rashladnog učina hladionice i tehnički proračun komponenti sustava. Na kraju je prikazana shema spajanja i automatske regulacije te dispozicijski crtež sustava.
Abstract
Refrigeration system for deep-frozen meat storage is an important element in the meat processing industry because it allows food storage for a longer time period, that the meat does not lose quality. The meat is stored at -18 ° C by means of a cooling system with ammonia (R717) as a refrigerant, with two stage compression and two stage damping with intercooler (mixing tank). A cooling storage is located within a complex cooling plant and is made of pre-cast polyurethane panels. This paper gives the calculation of the cooling capacity for cold storage and technical calculation of system components. Finally, there is the diagram of connection and automatic regulation with system disposition drawing.
