Abstract (Croatian)
Mlijeko i mliječni proizvodi nezamjenjive su komponente u proizvodnom lancu hrane te njihova tehnologija proizvodnje i prerade svakodnevno zahtjeva velike količine rashladne i toplinske energije. U ovom radu projektirano je rashladno postrojenje s akumulacijom rashladne energije za dnevnu preradu 100 000 litara mlijeka. Postrojenje je smješteno na području grada Zagreba, a nazivno rashladno opterećenje postrojenja iznosi 850 kW. Radna tvar u sustavu jest R717 (amonijak). U uvodnom dijelu ovog rada opisana je tehnologija proizvodnje mlijeka te je zatim provedena analiza potrošnje rashladne energije u procesima prerade mlijeka. Na temelju proračuna kružnog procesa izvedeni su termodinački proračuni isparivača te evaporativnog kondenzatora. Na kraju rada proveden je proračun akumulacije mase leda tijekom noćnih sati kada je električna struja jeftinija. Uz rad će biti pridodana i shema spajanja spajanja i automatske regulacije i radionički crtež isparivača (Linde-ov tip).
Abstract
The milk and the dairy products are irreplacable components in the food production chain. The production technology requires the large amounts of the cooling and heating energy. This thesis deals with the cooling power plant design. The plant is capable to store the cooling energy and it is used for processing 100 000 liters of the milk daily. The plant is located in Zagreb and its cooling power load is rated at 850 kW. The system uses R717 (ammonia) as the refrigerant. In the introduction the milk production technology is described. In addition the consumption of the cooling energy used in the milk production processes is analysed. Thermodynamic calculations of the evaporator and the evaporative condenser are derived based on the thermodynamic cycle calculation. In the end the accumulated ice mass during the night, when the electricity is cheaper, is calculated. The scheme of the connection diagrams and the automatic regulation, as well as the production drawing of the evaporator (Linde's type) are attached.
